Pav Bhaji is a staple of Mumbai street vendor fare. The smell is intoxicating and the mix of veggies and spice are enough to make your mouth water! The Desi Diva has put together a quick, easy and delicious one pot recipe to get your Pav Bhaji fix without having to make the trek to the motherland!

Pav Bhaji (4 servings)

Ingredients:

2 tbsp olive oil
½ tsp mustard seed
1/3 tsp ground cumin
1/8 tsp tumeric
1 tsp chili powder
2 tsp Pav Bhaji masala
1 tsp salt
1 ½ cup onion (finely chopped)
1 cup cauliflower florets (finely chopped)
1 cup shredded potatoes (frozen is fine)
½ green peas
½ cup carrots (grated)
½ cup water
1 ½ cups diced tomato
1 tbsp tomato paste
3 tbsp fresh lemon juice
¼ cup cilantro (chopped)
lemon wedges
Naan

Heat oil in a large nonstick skillet over medium heat. Add mustard seeds and cumin. Let the spices heat until they start to pop. Add potatoes, cauliflower, 1 cup onions and carrots. Sauté 3-5 minutes, add water and cover. Continue to cook over medium heat until the vegetables are soft, adding extra water as needed.

When the vegetable mixture has softened, mash with a potato masher. The mixture should resemble lumpy mashed potatoes. Add diced tomatoes, tumeric, red chili powder, Pav Bhaji masala and salt. Stir well and cook until the tomatoes have broken down and started to dissolve into the potato mixture. Add lemon juice and tomato paste, and then gently stir in the peas. Continue to cook until the peas have heated through.

Stir in cilantro. Remove from heat, add remaining ½ onions as garnish.

Serve with toasted naan and lemon wedges.

Pair with a bold red wine such as First Drop Mother's Milk (Australian Shiraz, 2004) or Tobin James Ballistic (California Zinfandel, 2006) for a delicious way to cap off your day!

This easy recipe is delicious, nutritious and sure to please! By using frozen vegetables such as cauliflower and potato shreds, prep time is minimal. You can also add vegetables you have on hand to added flavor. I added raw coleslaw mix (cabbage and carrots) as a quick and easy way to add more fiber without changing the texture and flavor.
